Quinoa Corn Salad, Tilapia & Creamy Avocado Dressing

I’ve had this weird craving for avocados lately and we had some fish in the fridge so I was talking to my roommate and I was like hmmm how do I make that work?

Well I came up with it! I suggest you serve this cold, it’s delicious.


Creamy Avocado Sauce:
  • 2 avocados
  • 1 1/2 tbs cilantro
  • 1 tsp salt
  • 1 (oz) plain greek yogurt
  • 1 1/2 tbs lime juice
  • 1 garlic clove minced
  • 4 tilapia filets
  • 1 tsp cilantro
  • 1 tsp lime juice
Quinoa Salad:
  • 1 cup dried white quinoa
  • 1/2 onion
  • 1 (15 oz) can of sweet corn
  • 1 tsp salt
  • 1 tbs lime juice


  1. Bring one cup of quinoa and 2 cups of water to a boil, reduce heat to low and let simmer for 10-15 mins
  2. Spray pan with non stick spray, place tilapia filets in pan
  3. Flip tilapia filets after 2 minutes, sprinkle cilantro and lime juice evenly amongst all filets
  4. Flip filets over after an additional 2 minutes and repeat until they are cooked, place aside to let them cool
  5. In the same pan, place chopped onions and allow them to cook until desired level
  6. When the quinoa is done cooking, remove from heat and allow it to cool
  7. Place cut avocados, minced garlic clove, lime juice, cilantro, salt and greek yogurt in a food processor and process until it reaches a creamy consistency
  8. Once the quinoa is cooled, mix in the can of corn and the cooked onions
  9. Place quinoa salad in a bowl and top with a tilapia filet and a spoonful of the avocado dressing on each plate
  10. Serve & enjoy!
